Food microbiology is designed to provide general microbiology of food microorganism used in food industry. First half of the lecture will be covered on general principles of microbiology including cell structure, taxonomy of microorganism, cell growth. Second half of the lecture will be covered on metabolism, genetic backgrounds of beneficial traits in food microorganisms. beneficial microorganisms used in food fermentation, probiotics, prebiotics, synbiotics, and environmental factors affecting microbial growth in foods.
